Trained alongside Joël Robuchon, Jean-Paul Hévin won eight major pastry and chocolate competitions before earning the prestigious title of Meilleur Ouvrier de France in pastry and confectionery in 1986. He founded his eponymous brand in 1988, developing a rigorous universe around dark chocolate with boutiques in Paris, Japan, and Taiwan. His style is recognised for its balance of aromas, purity of blends, and an unmatched attention to detail that make each creation a true signature piece.

To celebrate this anniversary edition, Jean-Paul Hévin presented:

A retrospective exhibition featuring stunning photos of his most iconic creations from his 30-year career, illustrating his journey and unique style.

A chocolate artwork installed in the Inspiration Alley, embodying his artistic vision of chocolate.

A contribution to the collaborative 30th anniversary cake, bringing together several renowned chocolatiers and pastry chefs for a festive and gourmet creation.

A talk during a round table on sustainability and transmission, two core values that he had championed throughout his career. Award ceremonies honouring excellence in chocolate making.

Jean-Paul Hévin also served on the jury for the Les Éclats du Chocolat competition, organised in partnership with Galeries Lafayette Le Gourmet. He presented one of the four awards given to exhibitors to recognise their creativity, expertise, and commitment. His presence highlighted the artistic and demanding dimension of this anniversary edition.
