En Résidence
“En Résidence” has established itself as one of the must-see highlights of the Salon du Chocolat et de la Pâtisserie in Paris. Here, the creators—chocolatiers and pastry chefs—take over the space and bring their art to life right before your eyes.
Every day, they conceive, prepare, and share original creations, engaging directly with the public. A place of experimentation, knowledge-sharing, and inspiration where indulgence meets innovation. Here, creativity is lived in the present.
Two vibrant spaces where techniques are revealed, ideas take shape, and conversations flourish.

Cocoa-Producing Countries
Cocoa Destination: a journey to the roots of chocolate
The Salon du Chocolat Paris offers a rare opportunity to connect with the world’s cocoa producers – the true guardians of chocolate’s origins.
Travelling from across the globe, they gather to share their expertise and reveal the secrets of this precious bean. Through authentic exchanges, visitors discover the richness and diversity of cocoa: unique terroirs, traditional cultivation methods, and fermentation techniques that shape the aromatic complexity of chocolate.
This space highlights the fascinating journey of transformation from cocoa pod to the early stages of chocolate making – a sensory exploration through plantations and the people who cultivate this gourmet treasure. By the end of the visit, chocolate will (almost) hold no more secrets.
