Patrick Pailler jumped at the chance when Andreï Dellos offered him the post of Executive Pastry Chef at Café Pouchkine! He took on this challenge readily, and with great relish. But his story does not stop there. In 2019, Patrick also became the new Sweet Creations Chef at Café Pouchkine, taking over from Nina Métayer.

Barely 35 years old, he had already spent 15 years working his way up the ladder at Fauchon – including four years as Pastry Chef. Everyone agrees that he is an exceptional technician, an embodiment of French pastry with all the respect and innovation that entails.

Now, in the 700m2 production laboratory near Paris and surrounded by 20 passionate pastry cooks, Patrick Pailler breathes life into each of Café Pouchkine’s creations. Curious by nature and with an unmistakeable sweet tooth, Patrick Pailler brings French tradition and Russian products into sweet harmony.
