Florence Lesage – Hôtel The Westin Paris Vendôme
Originally from Picardie, Florence Lesage dreamt of being a chocolatier since she was a child. After earning several pastry qualifications (a BEP, a BAC PRO and a BTM), she took part in the industry-wide Olympiades in 2014.
Elected World Vice-Champion of pastry and confectionery in 2015 at the WorldSkills competition, Florence Lesage then decided to hone her skills with a Brevet de Maîtrise diploma.
After working in the kitchens at the Château de Montvillargenne in Gouvieux, she headed up the pastry team at The Westin Paris-Vendôme with Chef David Réal. Appointed Pastry Chef in July 2018, Florence Lesage now leads a team of 8 cooks.
What’s more, in May 2018 she was paired with Alexis Beaufils to represent France in next year’s Sugar Art World Championship.
